The original site of Stubb’s Bar-B-Q, located at 108 E. Broadway Street, Lubbock, Texas 79403, was opened in 1968 by Christopher B. "Stubb" Stubblefield in a modest building in downtown Lubbock. Drawing on skills he developed as a mess sergeant during the Korean War, Stubblefield created a barbecue restaurant that quickly evolved into a cultural gathering place. The venue became known for its informal live music and Sunday jam sessions, where local performers and traveling musicians would play in exchange for meals, fostering a collaborative and inclusive environment during a time of social division. Artists associated with the venue helped shape the emerging West Texas music scene, blending country, blues, and rock influences. The original location closed in 1985, but the site remains significant for its role in supporting musicians, promoting cultural exchange, and establishing Lubbock as an important center of Texas music heritage.
