Adelita Tamale & Tortilla Company
Four generations of the Borrego family have owned and operated Adelita's since they first opened in 1938, beginning with Roberto Borrego Sr. The current owner, his 93-year-old son, Robert Borrego Jr., is still a regular presence at the factory and will gladly tell you all about the introduction of flour tortillas to Texans in the mid-twentieth century.
Using corn delivered from LaCoste, where it is transferred to and stored in a silo that sits just in front of the business, the corn is then soaked in lime water before grinding it with a volcanic stone in the old, traditional style of masa-making. Stop by the retail store, where you can easily peer into their giant factory kitchen, and purchase tamales, flour and corn tortillas, tortilla chips, chicharrones, and other local and handmade food products.
